Coconut Flour Porridge
Some people consider porridge to be the ultimate comfort food while others love to have one during rainy days. Typically served hot with milk and a wide array of ingredients, there’s no question that porridge is one of the most sought after home-cooked food today. For this recipe, you’ll be using coconut flour which could slightly alter the texture of the end product. However, that doesn’t mean that it’s any less delicious than your traditional porridge!
Compared to the usual recipe, this particular porridge has higher fiber content and large amounts of vitamins and minerals.
- ½ cup water
- 1/8 tablespoon pure vanilla extract
- 1 tablespoon coconut flour
- 1/2 cup whole milk
- ¼ cup coconut flakes
- 2 tablespoons wholegrain chia seeds
- 1 unripe banana
- Dash Himalayan salt
- 1/3 cup organic rolled oats
- 2 tablespoons virgin coconut oil
- 1 to 2 tablespoons of organic raw honey
- 2 teaspoons butter
Start by combining the banana, vanilla, water and milk. Scatter the coconut flour in the pot and start mixing and mashing all the ingredients together using a fork. Now start adding all the ingredients inside the container except for the butter and honey while will be added later into the cooking process.
Flare up the stove and place the concoction on top of the fire. Bring it to boil while at the same time gently mixing the whole concoction. Once it boils, you can lower the heat and keep it at a moderate flare for about 10 minutes, all while stirring the pot. You can remove the mixture after this time or you can wait until you’re satisfied that the oats are tender. Cool and add butter and honey to taste.
